The only way for me to be comfortable is with apes. I have a terrible back, and live in chronic pain. Bars that are low literally will have me off the bike in 20 minutes. The 14” Wild One apes keep me from slouching. I wish I could ride all day, but after 2-3 hours I’m pretty much done. It sucks, but riding my bike, and getting in the wind is therapeutic for me.

I've tried apes and didn't care for them but I'm playing with the idea of trying more. I installed a set last week and hated the wrist angle. It's not the height so much for me but the wrist angle I find that makes them feel good or bad. The issue I was having was my bars were too low with the Wild *** seat pad on the bike, causing me to stretch with the back rest. What I've done to "fix" it was I ordered a new seat, a Mustang Wide Tripper Solo (can add rear pillion and will). I have the backrest also, but it isn't installed in the pic. It lowered me into the bike making the bars "higher" and therefor more comfortable able. The Wild 1 apes seem to have a similar grip angle to my narrow beach bars and may look into them, but I'll need new risers too. The stock Crossbones risers tend to slip, and mine have with apes before.

Too many swear by apes not to give them consideration.

Which brings me to another question, not sure if I've touched on this before. What bags are these and how to they attach? Also, can you run a sissy bar with them without modification? Is so, what mods?

Not sure what brand of apes you tried that had the bad wrist angle, but I can tell you that the 16" Wild One Chubbys, I have on Reaper, have a very comfortable (to me, anyway ), natural, wrist angle. Here are a couple of pics that show the angle:

Clammy, the angle on those bars looks very comfortable, mile my beach bars. The other bars were takeoffs from a bike and I have no idea what they were, but were basically drag bars that were in the shape of apes. I need to play around with some metal to figure out what I want exactly. I need a comfortable wrist angle and a decent pull back, but not so such I can't stretch lol.

The angle on these bars keeps my wrists pretty much inline with my arms. Zero strain.

They are eBay bags, not sure and can't remember the brand. Just search for hard saddlebags. I paid $166 for them with everything included ( L brackets and bolts) Yes you can run a sissy bar with them.
