Oil Pump not Sealing
Can't say I have a lot of faith in those shops......
I guess that the question would be - How do you know the "oil Pump" is not sealing = Oil pressure check?
If that is the situation, why did the shop that did all the work give you the bike back if there was an oil pressure problem?

The OP has an '85 FXST which has an EVO engine. The oil pump has two gaskets and seats into the rear flat surface of the cam chest. Like the Shovel head engine.
You have to assembly, align, and compress all the "guts" (containing a shaft, gears, keys, etc) and sandwich them between a cover, a gasket, a body, a gasket, and then the engine case...
I only did it once, many years ago, and don't remember it being a hard thing to do.... but that was many years ago....
It sounds to me like one of the gaskets started leaking after the OP got his bike back.... he is wondering if the mating surfaces are possible warped...
But I still don't know why the shop won't make it right, or offer a solution to make it right.... ???? For whatever reason, it looks like two shops can't figure it out...
It's always possible I am misunderstanding the problem..
