I use it all the time, well at least I did before the snow got here.
As for when I shift into it, that depends on what I'm doing at the time.
If I'm just tooling along in no particular hurry I might shift into it as low as 50/55. But I try to stay out of it below 55.
On the other hand if I'm really trying to rip up the pavement I might not see it till somewhere well north of 80, if at all.
For doodeling along at 65 or so on the highway its great.

There's a long, steep hill on a 55 mph two lane road near where I live. Just before the steep uphill, there's an equally steep downhill. In a car, I usually get a pretty good speed up on the downhill side so it doesn't have to downshift too much on the uphill side. The first time I went there on my '08 Custom, I didn't speed up on the downhill side just to see how soon I'd have to downshift on the uphill side. I never had to, not even close. It went up that hill like it wasn't even there. It was in 6th gear all the way. And I had a huge grin on my face. The low-end power and torque of this bike is really sweet.
I use it and it's so smooth I don't relize I'm going 80 at times. I back off around 70 to 75 and it just purrs along. It will dog out if your going below 60.
When I first got my '05 Deuce, I remember makin' the comment that on the highway it needed a 6th gear. Now that I have my '08 Custom, I got my wish. The 6th gear is perfect for cruisin' down the highway. To me, it all feels the same around town when comparing the 5-speed transmission and the 6-speed, but there is definitely an improvement when goin' down the highway. That 6th gear just smooths everything out. I normally shift into 6th around 65 to 70 mph, and down shift back into 5th around 60 to 65 mph.
