Well i am thinking of ditching the Fat Daddys for one reason and one reason only........tube tires.
Let me start by saying i love the Fat Daddys but my concern is having a blowout with tubes.I had a rear flat tire and that was not brilliant and i have concerns about if the front goes when you are sailing along a country road.Obviously when the tube punctures it goes down straight away whereas tubeless tires would go down more slowly in most cases.Also if you have a flat tire with a tubeless you have a chance of repairing it on the side of the road whereas there is no chance with tubes (had this happen and it stuffed my whole weekend up).
Ditching the Fat Daddys would mean putting some PM or similar wheels which will change the whole look of the bike.I really want the nostalgic look but i wont get that with PM style wheels and i would pretty much have to change the whole look of the bike (costly).I really wanted to put a 21" front Fat Daddy on with a custom paint job and air ride suspension eventually but the tubes worry me.I know people have said they have not had a puncture in 10 years but that does not re-assure me,i had one so it is possible and only has to happen once.
What do ya think, Over- reacting,over-cautious ???
Don't worry about what "could' happen. If that were the case, we all should be living in Fall Out Shelters.
Tubes.. tubeless... Not worth sweating what may or may not happen in the future.

My opinion?
I think those Fat Daddy wheels look crazy good on your bike and there isn't a single wheel on Earth that would look better.

Don't change a thing! No disrespect is intended, and it is just my opinion, but the classic styling crossed with the heavy look of the Fat Daddys would be deminished with a larger diameter wheel, reducing the presence of the now matched white wall profiles. I 'm telling you, many a Deluxe & Heritage rider on this site is after the look you aready have.
Trust me dude i have tubes.Had a rear puncture a while back and when it got repaired tried to run tubeless but no go. Web site says they are sealed but mine arent thats for sure.
