mine had a little c-ring on the inside which fit into a grove on the cables but i just tugged on it also and it popped right out. But then installing the new ones in was kind of a tedious 15 minutes getting the new rings back on to the new cables. Good Luck

loosen them first and they should fall out when you open the housing. be ware of the little brass barrel that will fall out. when you raise the cable to vertical there is a slot and the barrel cones out.
You can probably reuse the cables. Excess cable can be as bad as too little with big arcing loops and kinks but you should be ok. Throttle shouldn't be too bad, brake lines won't matter much. Clutch cable is your biggest concern. Depending on how much excess you have you may find your cable squeeze is harder. But as long as it returns freely and isn't binding its nothing to worry about. My guess your biggest problem will be aesthetics.

Yes they pop out and there are no other screws, bolts, etc holding them in place. As others mentioned, they are held in place with small "c" clips that use friction and pressure to stay in place. Once you loosen the cable tensioners and have slack in the cable you should be able to pull them free from the housing and then remove the ferrule ends from the grip. It takes some force but as some have suggested, some lubricant (WD40, silicone, lite oil, graphite...) can help some.
