You will loose Tq and Hp but its not like you'll feel it in the seat of your pants, Do it. I did, went from T-header to V&H Long Shots with no baffles, I did't feel anything.
Depends on what kind of riding you do. For the typical rider that cruises around town you will lose power, and you probably will feel it a little bit. If your plans are to run wide open all the time you will actually gain hp, but only when your running her wide open which is probably not very often. So to answer your question, yes and no. I pulled my baffles out and love the straight pipe sound so to me its well worth the couple ponies i lost.
This question evokes an "it depends" response. You likely won't be full throttling every time you accelerate.
I went for it (had my Street Glide's cylinders mapped individually) after I had the V&H Dresser Duals installed, while keeping the SE mufflers for now...didn't note any drastic torque "let down." In fact it's running stronger at all RPM ranges and accelerates as well if not better than before. It's up to you and your machine. Good luck.
You will not lose power compared to stock. But, fishtails are notorious for robbing power compared to a good performance pipe. If they are duals but not fishtails then it will still likely cost you a little power compared to a good performance pipe but not as much loss as fishtails.
