Do I need to redyno?
If I change the baffles in my pipes do I need to re-jet/dyno my bike again.
I have a V&H fuel pak, stage 1 and short shots with reg. baffles right now, but thinking of getting the quiet ones

Technically to get the absolute best performance (apparently) but not necessary. You will likely feel the bike wind up quicker with big bore baffles but have a tad less TQ and the reverse if you are putting in quiet baffles but the engine will be able to cope!
I swapped several times between the BSS quiet and normal baffles quite happily! I now have a PC autotune module which takes care of that type of thing. I'm about to swap pipes to D&D lowcats and not planning to dyno (apart from to see what numbers it is making!)

If Ur using fuel pac I'd think all U to do would be call V&H and see if U need to change the settings..
