For anyone planning to take on a project like this, do your homework and RTFM (read the fricken manual). I have had my manual open the entire time. The wiring extensions was a little tricky at first but I figured it out. If I ever do this again, it will be easy. Lots of reading here before I started and the one thing that is for sure, draw a pick of the wiring for the pins before pulling them out.
I had heard horror stories about removing the tank. I rode it until I was dang near out of gas, took my time removing it and did not spill a drop. I also drained the brake line and did not spill a drop. Not that hard if you take your time.
Hope it goes back together as easy.
Good stuff man, I like your soda bottle for the brake line. Even I didn't think of that, I used a sandwich bag and two zip ties. Also, the tank was a PITA for me as well, it got in the way more than anything. I wound up removing the two bolts and rocking it back to access the wiring. It was just as much as a pain to run the extended throttle cables up through the housing. Looking good so far.

I did end up having to run out to Sears this morning to get a good set of Retaining ring pliers. No way the cheap set I had would get that C clip back in that holds in the clutch cable. I also had to get a soldering iron.

I had to keep bending my ring pliers with my other pliers to get that ring back on. It was definitely stronger than my ring pliers.
