Like others have said, check the compression, and that everything else is good. A camp swap and better tuner and a trip to the dyno and you'll hit 100+ with no problems.

I'm getting ready to drop in a set of Andrews 37b cams along with the Screamin eagle hydraulic cam plate. I should really have fun then....

HAHAHA that's the same thing my wife said! My problem is that I just can't get off of 2 wheels, and when I'm on them it's got to be FAST. I don't even own a car anymore, I ride daily and love it!

I don't know what could be wrong with it. Bike seems to work fine, no popping, doesn't burn any oil, no smoke, to me there are no signs of it not running right.
2 guys mentioned a compression test but wouldn't I be burning oil if there was a problem there?
The drive train is not even loosened up yet. That would take several thousand miles before it can achieve the top speed. At 381 miles everything is still tight.
The only other thing I might do is the next time you have it in the shop, have them verify that you have the right flash in your ECM. You could also do a WOT run, kill the motor and pull over, check the plugs and see if you're running really lean on the top end. I have an '07 Fatboy, stage I, and had it over 100 several times this summer with the wife on back while at Laconia.

The simple answer is... put it on a dyno. You aren't going to Las Vegas, you don't have a stage dodedoh kit, you don't have a black bike, you don't have a chrome bike that kills black bikes, you don't have an SE this or a crotch rocket that... drag strips and to a lesser degree dynos are the universal neutralizer of mine's big... er... faster than yours.
