The fact is a jockey or tank shift is a step backwards from a conventional setup. It's never better to ride with one hand on the bars vs 2 hands.
But that doesn't mean anyone shouldn't get a tank or jockey shift. Not at all. I get why it's cool and fun - it's a high- five to how bikes used to be set up and I can see why someone would want to try it. It's no different than riding a hardtail or an old kick start bike. Is it practical? No. Is it better than new technology? No. But it's not supposed to be.
As for safety, hell if you all really want to be safe then we should sell our bikes and buy volvos
