Im also 5'6'' and 190 and this is what I went to the ride is perfect for.
1. Lowered rear 2" using lowering bolts, lowered front 2" with progressivelowering kit.
2. Seat Le Pera Bare Bones, it will make you feel like your sitting in your bike and not on it.
3. Leave the stock mounting hardwear on the bags, it only takes 3 bolts to remove them. I prefer hard mounted over quick detatch. They stick out to far away from your fender leaving space between your fender and bag. They look ugly...IMHO
4. I have had 12" mini apes and 36" beach bars and the BB are where its at. Perfect fit for my TRex arms.
I like the bike a bit lower than stock, but it does increase your board scraping in turns. I went from hitting them once in a while in an aggressive turn to running the boards on most turns by lowering it 2" (rear only), I went back up in 1/2" increments and ended up just over 1" lower than stock before I was able to avoid the scrape with typical around town riding. Maybe I just ground enough of the boards off that I don't hit them anymore.
I would go with barebacks for the bags since I don't like to be without and I'm too lazy to reach for a tool every time I want to put them back on.
Barebones for the seat. At first I didn't like it, being used to a big ol mustang seat but after your first couple of 100+ mile rides I learned to like it.
You didn't mention if you have a sissy bar and pad, if you do, I would change that to a QD also.
Beach bars for someone your height. Apes will just make you lean forward more.
Lower the rear only. Lowering the front end has problems on clearance with hard cornering. The HD kit works well here. My feet are flat on stops and Oh yea, there is lots of drool on the bike because of how good it looks.
Take the seat to an upholster for reworking. Cost me $100 and really happy with the results.

I agree with a previous post to rotate the stock bars back...that worked for me
