My girl tells me that the sissy bar with a backrest pad made a much bigger difference than the pillion swap did since she can sit further back and no longer has to hold on tight when I take off. Although, I kinda miss that holding on tight part. :/
I planning to get the ultimate seat for my wife I. The current seat is good for a couple hours but the opportunity came to get something better so we are. The next thing I'll probably get is a set of shotgun air suspension. If I can swing it I'll probably get both the seat and the air suspension next year.
I have a Mustang wide touring seat on my Heritage. The rear is 14 inches wide and well padded. Wife loves it. They aren't cheap but how much does an unhappy wife cost you?
I just used the demo touring seat with backrest for a few days. I'm having same issues as OP. Wife loved the seat, me not so much. I felt that the seat moved me forward and maybe even lower. It doesn't seem to have the padding of the factory seat for the rider. I liked the lumbar provided even without the backrest. Probably going to see about adding padding or an airhawk under the cover like danny grey does. I have looked at many other manufactures but without trying it first I am hesitant.
We also borrowed the 14" passenger pillon from a friend. She preferred the full touring seat.
While the driver section works great for me on the Signature Series seat, it may or may not for you. It's easy to see though, that the passenger section is more than ample for most fannies.

I also just got the signature series seat for my heritage springer with the driver backrest. Got it because the pillion pad was too small and uncomfortable for the wife. Also added floorboards and now she loves it! No complaints whatsoever! But it honestly isn't as comfortable for me as the stock heritage springer seat. But if mama is happy.....

Careful now you mentioned Shotgun Shock in your reply and we don't want to make this a SS thread.... Just joking..... You also might want to look into the Progressive Mono-Tube front suspension for the best at both ends.
