It would be nice to follow the whole contour of the bars but to me the just adds to many places for the cables to bind. You need to remember that when turning the bars from side to side your cables need the play to keep them from binding up in a full turn.
Look at the pic below as an example. As you can see that the way the throttle and idle cables exit the controls you will not be able to run the along the contour of the upper bars. If you did you would possibly create a sharp bind on the cables. Hope this helps you. Take a look at some of the pic in the Ape hanger **** thread. You will see all the different way folk have done it.

I'm sure you've used the search facility and read all the threads like me. I got the impression it wasn't too hard - just very time consuming. And yes, there are plenty if YouTube vids on the subject. Perhaps if you gave us the search terns that aren't working for you, we could suggest where you are going wrong. "Teach a man to fish..." and all that.
