I dont know how to undo the brake and the clutch and the grip it's really frightening and intimidating - i am so tired of getting ripped off by the dealerships.
Most of the videos I've seen are for guys and it's really hard to understand what they are saying?

Honestly, get a service manual and watch the YouTube videos over and over. You either have the aptitude for it or you don't. Factoring all involved in disassembly, running the lines, and reassembly, and the rates/cost of living in Hawaii, I'm not shocked about their asking price.
The first time I ever changed bars, it took me 6 hours trying to work through the process of fishing the lines through the bars while keeping everything intact. Now granted these were hard acute angle z bars, but it is a time consuming endeavor. Menace apes are much easier, but still have their potential for hiccups. Bars are among the easiest things to change once you have a plan and a knack for how you accomplish it. If the videos are overly confusing, the safest route is to have a professional install them.
If you want some tips or specific questions answered I have no problem going over them on pm. But definitely something you want a solid plan to undertake.
just picked up my 2018 breakout having riden a street bob for 5 years, have to say I’m really happy, everyone in my Dyna circle of friends were saying I’d hate the ride but I think it’s great and a fantastic bike
only two issues I have, it seems much harder to see out of the mirrors so wondered what options I have there and also i don’t really like the sound of the bike with the stock exhaust so need to swap it out
now the dealer said I have to go full stage one as on the 2018 I can’t just swap out the exhaust and then do the tuner and air filter later, (this was fine on the bob, just got a bit of Decel pop)
any thoughts on either?

Harleys tribal mirrors or others with a wider arm will allow you to see better. Also boosting the risers up south a riser spacer may help.
As for the sound, it's been my understanding that the sound is always going to be somewhat inhibited by the cat. Some skipping may make it a bit louder, but most clips I've heard are still somewhat disappointing. Tab skipping with zombie baffles are probably the loudest out there without changing the whole pipe.
I have a 2018 BO as well. All I did for now is flipped the mirrors. I also bought riser extensions/spacers. Haven’t installed them yet. Once I do, I’ll let you know if it helps with the mirrors.

I have one of the last twin cam Breakouts and found the standard mirrors woefully lacking with a huge blind spot. I initially bought a set of the Tribal Mirrors but despite stating they fitted my model the threaded stalks were too short and could only be fitted without the supplied washers. Returned them and bought a set of Rizoma Tomoks. Expensive yes but very well made with anti glare glass and longer arms to eradicate the blind spot I was experiencing.

Buy the bars and a cable/wire kit from LA Chopper. It’s pretty much plug and play with the exception of clipping and soldering wires. You’ll also need to bleed the brake system afterwards (if the bars you choose require the brake line replacement). The throttle cable is easy. Just take the time to understand the adjustments.

Another option is to go the namz route and get the harness extensions. Price is decent for something that is plug and play. I don't like soldering unless I absolutely have to. Esp with can bus system.

I prefer to solder and shrink wrap. Easier to hide and looks more sleek than another set of plugs.
