So just adding pipes for now will be ok? Will it not make it run even more lean?

I recommend a tuner if you are going to add a full system. You might get away with running slip ons but you have to remember these bikes run super lean from the factory. By adding new things it will make it run leaner. Hot motor = bad

Do you gain anything from removing baffles aside from sound? I read somewhere that you will lose torque but not sure why.

I think many would argue that you get worse sound without baffles. In my experience you get a deeper tone with baffles and without it can be tingy and may backfire and pop more.

You will lose torque because you will lose back pressure (also why it will backfire more). If you decide to still ditch the baffles you can tune it to get it to run properly, but then you will want to tune with just the pipe mod rather than the generally accepted idea of not needing a tune until you change both pipes and AC.

On newer FI bikes a pipe change should not lean it out. The O2 sensor works in conjunction with the ECU and tries to optimize the fuel mixture. It's not like a carburetor that needs jetting after back pressure is relieved.
