sure, take off the body pieces like fenders and tank, sand them down, primer, spray paint any color, do a few coats, then spray clear and buff each coat, do maybe 6-7 coats of clear. and buff each time.
rattlecan jobs can look professional if done well
as for the engine and other parts, use high temp black, and cure the smaller parts in an oven by the directions on the back. if you paint the engine, the paint will cure with the heat it produces, but you might notice a smell for a day.
this is the extremely cheap, but labor intensive route.

I don't know, if you like the look of all black, then have it repainted.
nightster roadster and sportster are basically all sportsters i think the differences are rear fender and forward controls, handlebars, and the paintjobs.
