I live in Nebraska and here it seems like every HD you see is an UC. For that reason, I would not want an UC.

I agree, I also was tormented with that decesion and ended up buying an Ultra, stripped down to look like and upgraded SG and always have the options to put back (already purchased and paid for options)at any time I choose
I bought an '08 Street Glide over an Ultra because I like the "clean" look of the bike (i.e. no fender reflectors, no pinstipe, etc.). I also like the Silver faced guages. Did you see in the catalog how much those are to add the the Ultra (~800.00).
Get the SG.
The initial cost to turn your SG into "an ultra" would be greater than going from Ultra to SG but I think in the end if you trade in some day you could remove all the thinngs you added and sell them, recouping some of your initial costs and at least breaking even while enjoying the bad azz looks of the SG. With the Ultra you have to put everything back on before trading or selling.
Woulda bought a classic had it been in stock, but the dealer was out of them, and awaiting 08 stock. Was a lil leery of the Ultra, and whether the lowers and trunk would come off easily. I love my SG, but would be hard pressed to not consider an Ultra.
The lowers come of in fifteen minutes or less. If that isn't fast enough, you can buy a quick tach set up for about a hundred bucks.
The detach setup on the Ultra with the speakers, lights and antennas, takes about the same.
When I'm in touring mode, I like the extra brake lights and the fact that the rear end is well lit (more visible ) and tailgaters in cages have a better view of my brake lights since they are up higher on the tour pac when it is installed.
