I've got one of those on my truck. Cannot see how that would work on a bike, just not enough clearance for much to stick down.

if you drive over branches, brush or maybe a rock, couldn't that open the valve without one knowing?

Not really, it has a positive spring lock that holds the small lever between two tabs. I suspose uf i were backing in thick brush something could hit it ecactly right and pop it open but id have to be backing up. Driving forward wouldnt do it.
I'd say the chances are about the same as having a stone flip up and puncture the oil filter.
