I'm hoping to learn a few things and need to call upon the collective wisdom shared herein.
Please!
I have three "rides."
I have an '88 Electra Glide ( " '88 " ), a '00 King Classic ( "Red" ) , and an '03 King Classic ( "Anni": short for... guess).
They're all running well.
They're all tuned, clean, and road ready.
I ride each one every third ride.
Each one is unique, special, and different from the others.
Each one is my favorite.
Anni ( '03 King Classic ) runs A LOT hotter than the other two.
It runs so hot I'm wondering if something may be "a miss."
Riding the highway on "Anni" is comfortable as it cools down on the open highway but in town, in traffic... I find the engine gets so hot I am concerned.
This is not true for "88" and "Red."
Why does "Anni" run so much hotter than "'88" and "Red?"
Is this abnormal?
Can anyone cite the "normal" operating temperature for a carbureted '88 air cooled V twin, , a 2000 air cooled V twin, and a 2003 air cooled Twin?
Why is "Anni" so much hotter than the others?

It's still hot, don't get me wrong... but not as hot as before.

Not a lot of engine info to go on... hey, but at least the bikes have names......
I don't know the specific information you are asking for, I can only say:
I have an '03 EFI Heritage with an HD 95ci kit. It has a DynoJet tune, and a couple Auto Tune Pro sessions, with my PV tuner. It runs well, and runs cool...
I also have an "01 Springer, 88ci, with a carb. I bought it used with 9K. I noticed the pipes were extremely blue, so I suspected it was running lean... It needed some TLC, so part of that was a carb rebuild and I tuned it myself. It runs well, and runs cool....
Any air-cooled engine will run hotter in stop & go traffic, but both my early twin cams run cooler in traffic than my '16 bagger with a 103ci. (stage I with a FuelMoto tune and a couple Auto Tune Pro sessions with a PV tuner). Makes sense..... more cubes, more power, more heat....
You say "They are all tuned, clean, and road ready." But good running, properly tuned 88ci engines at similar power ratings, whether carb or EFI, should run at similar temps. If all else with the engine is in proper order, I would suggest that the tune on your '03 is in need of some work.....
