2 things. A torn or leaking oil pump o-ring will wet sump the motor and make it very sluggish - easy to check by pulling the allen plug in the bottom of the case. Also, CFR mufflers are horrible tuning nightmares with certain cams/combinations I don't think you will miss them. Power duals also killed your low end torque with them compared to a good 2-1. Withe that drastic of an exhaust change, tuning is in order.

So I just did an oil change, when I pull this Allen plug, will I lose the oil I just added in as well or no? Just what could possibly be down there if there is any?

You will lose what is in the dry sump of the engine. Anything more than 8-10 ounces becomes suspect. After getting the engine to the point that you feel it is sluggish, you pull the plug. When reinstalling the plug, be certain to not overtighten - there is a torque spec. I basically use a little sealer and snug them. Overtightening them will crack the case.
As the oil gets hot and thins out, sumping typically gets worse if it's leaking past the o-ring - unless it's really torn/broken. That's why I said get it the oil warm/hot and do it when it's exhibiting the symptom. You could crack it loose and snug it when it's cold just to get the plug started, then back it out when draining.
