why would a cruise control system go Full throttle once set?????

Is it stock or after-market? If after-market, it could be any number of reasons. You need to provide more information.

Could be the switch to accelerate/decelerate is faulty.

After leaning it's "stock" and that you bought everything off of eBay, I guess my next question is has it ever worked? If so, has anything changed like new bars or other changes to the bike that might have caused the issue? What bike (model and year)?

It hasn't worked since I put it on the bike
It is a 2007 street glide

Okay, now we're getting somewhere. So, the kit you bought off eBay has the module with the cable and the handlebar switch pack like shown below? You're sure the kit is for a 2007 Street Glide? The reason I ask is because if it's not, I read some older posts in this forum and other forums that it takes some "magic" to make another year's cruise control kit work because the '07 was "a different animal" when it came to adapting cruise controls and making them work.

I'm not saying yours isn't, but if you look at this link, that cruise control is specifically for the '07 Street Glide and no other years. Like I said, for some reason, the '07 was unique. If you search Google for 2007 Street Glide cruise control, you'll find some threads here and in other forums about the subject and what people did or didn't do. Good luck.
