I would have just built a 95" if it were me, using the 103" cylinders & SE heads, with the stock cases/crank/flywheels.

I'd send the cases to Dark Horse & let them do their magic to make things a solid build, including upgrading the left crank Timken bearing setup. The new crank from them is $1600 plus new rods, another $300 to $900. You'll want it balanced, so add another $525 for that. The cases work will be another $900 to $1400 to update to 07 & later cam conversion and Timken bearing. You could easily put $6,000 into that 103" upgrade before adding cams, lifters, oil pump & pushrods, which could be another $2,000. Plus labor (from your questions, it seems clear you don't have the knowledge to do the work yourself) so add 10 plus hours at maybe $150/hour?

For less than $4600 you can purchase a new 103" H-D long Block with matching VIN number. Yea, it won't be a Dark Horse solid build, but it will include the upgraded left crank bearing & much more. And it will still need a cam & tune upgrade.

ok then, that sounds a bit rich for my blood so, if I use my 103 heads and cylinders I’ll just have to get new pistons for the stock wheels correct?

Yes that's right. Let the guys know what cams you are considering and they can suggest a suitable piston. Different pistons, even though they are all 95", can give you different compression ratios which can make a big difference depending on what cam you use.

Almost. You'll need cams & various valve train components. Then you'll need a tuner & tune to make it all work. Much less money & will still provide a decent performance update as a 95 inch motor.

Does anyone have a build list for something like this? Surely someone else has done this build before.

Sell your 103 Jugs and Pistons, but keep your heads. Call Fuel Moto, get a price on a 98" kit. It will have everything you need, jugs, pistons, cams, gaskets etc. A true all in one package with everything you need and nothing you don't.
