Been a couple weeks, just wanted to update everyone and let you guys know it was the SPARK PLUGS. Removed them and they were very worn, and looked quite rusty on the exposed nut portion of the plugs. Replaced them with some champion plugs, havent had a long crank since. (Cranked 50+ times since, no issue) . Thankyou to everyone who suggested I checked the plugs!
Put a set of the Harley branded plugs in it. Yes, Harley doesn't make them but there low resistance plugs special for your ion spark detectionsystem that the coil reads and relays to the ECM .
Glad you got it fixed but you need to protect it on hills, hard throttle or getting more gear then motor likes .
If you get them, check the resistance and compare them to what you put in and report back to us as a favor for all the hard work we do on here

I recognize all of the words but have no idea what that means. Ion sensing must be magic. "Flame electrical conductivity"? Must be in microvolts or megohms.
Don't make that assumption. They are not expensive to replace, and HD has recommended replacement intervals. If they're more than a couple years old, give it a shot.
Just for future reference, if your 07 is like my 08, there is another fuel filter in the tank, the sock is not the only or main filter. The main filter is in a cup that is held on the assembly you removed by a horse shoe shaped pin. The replacement interval in 08 was 25,000 miles. You never mentioned vehicle mileage so filter replacement might be due. Long storage can gum up the filter also, and rusty plug tips suggest long term storage at some time in the past, most likely just before you bought the machine.
