My question is ...what should i know before i make the jump.
As suggested above, try several models. Once you've decided, get the bike at least three months before any long trip to get it broken in and things changed out.

I've got the '08 UC that's less than a week old and noticed from day one that I need to replace both the windshield and mirrors...hate to find out those things a couples days into a long ride.

Good luck!

Had a 07 Street Bob, the old lady started wanting to ride all the time, with 5500 miles on it I traded it for a 07 Wide Glide and did a Indy 103 build and decked the whole bike out. Had 14,000 on the WG and was doing 300 -500 mile weekends. The WG was a great ride and had all the power I could ever ask for but I did the same went to the dealer and threw my leg over a FLHT liked the ride and liked the price. As you can see I drove it home. You can do a lot to a FLHT for the 3000.00 difference in the other bikes.
It has running lights that yer gonna like, a batwing, nice touring seat on the 08's. The floorboard are killer too. What are you gonna do with all the room in the saddlebags.
Git the TALL detachable backrest for the old lady. Then when you ride by yerself you can take it off.
I really like mine, and the old lady loves it.

if you are wanting to take long overnighters then think what you and your OL want to take. Figure out which model it will all fit in. I know when I get ready to roll I have to tell mine that she is on a bike not a car and that she has to scale down. That normally works until it is time to come home. Then I am scratching my head tring to figure out where I am going to put everything...
