Bought my first bike with a windshield last fall. \\; It's a Road King Classic that really looks great with it off but ...
I am spoiled now. \\; The wind noise is deafening with it off. \\; Yea, I took a bunch of years off from riding but never realized the difference.
Maybe I've rode with it off 4 or 5 times but I usually turn around and get the shield. \\; I wear ear plugs even with the shield on. \\;
The funny thing is, if you run stock pipes without a windshield, you can hardly hear the engine. \\; I think thats why everyone installs loud pipes. Yep... I'm spoiled now...or just getting old.
I never even thought about a windshield in the 60's and the 70's\\; then I bought my first bike with a windshield and the two worst rides of my life was with it off. \\; Yes it might be an age thing... but who cares  \\;Ride how you are comfortable. \\; Frankly, I'm looking at adding a fairing so I can be even more comfortable! \\; My buddies ride without one and they are 1/3 younger than I.
I have also \\;become \\;spoiled! I ran all my previous bikes without a windshield and called the people with them \\; wooses! Got the deuce 2nd hand in Aug. of 05 with 2008 miles \\;and it had a hd quick connect windshield on it. I immediately took it off until December and put it back on to keep out of the cold air. We take a 360 mile trip one way in Sept. and May. It was a little cold in May when we left so I \\;put the windshield on for the ride out. I had almost no fatigue and could have gone another 360 easy. Over 65 deg. and 100 miles or so I'll try to look cool. Anything else, I'll be spoiled and comfortable too. Now my Ultra is in a class all by it self. I look cool and am super comfy!
Windshield definately, short if you want some wind and tall if you don't. \\; Mine's on all the time...short for around town or backroads rides and tall for the \\;400 series highways.
+ 1, Always off for riding \\;<\\; 45 mph, on 45mph<\\;. \\; The wind speed at 60mph<\\; without becomes laborious, at 75mph<\\; for a couple hours I'd rather do 150 crunches.
