Default Engine Temp

I am probably going to get lots of Sh@@ for this. I have not read the manual for my bike when it came to the Engine Temp range, when it is overheating and what's the safe temp for the engine to run.

One of the MOD this winter was to complete the custoom exhaust (True Dual) and install the Thunder MaX with Auto tune and the digital gauge design to display several vital signs from the engine: Engine Temp, AFR, HP, 0-60 and gas gauge. With the Thunder Max it is able to read the engine Head Temp. Yestesday, a perfect day for a ride I was practicing with the Road captain. We were practicing the "slow riding skill" at a local school. During this event if you have not encountered it all we did was practice the Friction Zone, making U-turns, figure eight and doing some off-set cone weave. As you can imagine not much air flowing through the engine and the temp got up to 321 degree according to the temp gauge built in the thunder Max. My question is for those who are well verse in this engine. What is the safe temp to ride this air cooled engine? At what point do I need to cool it before I damage something? Of course I am only concer about this during these events.

If I remember my ThunderMax setup a warning light ocmes at 350 degrees (although you can reset that figure to whatever you like. On the road, as sustained speeds my bibke hardly ever gets over 210-210; around town and in traffic around 230. If I remember the articles I"ve read on oil, dino oil begins breaking down substantially before 300 degrees, synthetic after 300 degrees. Anyway, I would not want my bike running anywhere near that temperature; since that was in your control I would watch it and cool the bike down before it got to that point; for me around 275.
