I am not certain if your bike is different to a 2007, but I have a 150/80 Avon Venom on mine with plenty of room to get the pulley guard back in. Someone here recently wrote about fitting a 160 and you may even get one of them in.
I have an 08 SG with a chrome fat boy rim on it. The 150 tire minimum for rim width is 3". I had a 3" 150 on my Wide Glide a few years back with a 150 Metzler on it. I watched the tire pressure all the time and I had alot of cupping issues with it. Metzler told me a 150 should have a wider rim even though it says a 150 will fit it.

That's interesting. I haven't used the latest Metzelers, I prefer Avons, who recommend slightly higher pressures than in the owners manual. It is the widest of their tyres they recommend for a 3" rim. I use higher than stock pressures when riding 2-up to improve handling and wear. I'll keep this in mind as I ride my new 150 Venom! It should be possible to reduce cupping by using slightly higher pressures.
i've seen where guys are using a 160 on the 08, however i've got an eighth of an inch clearance between the right side of the tire and the fender with the mu-90-16. so i haven't a clue as to how they're getting a wider tire to fit in there. as far as a fatboy wheel, the answer is no for your 08. remember, you've got i.d.s. = isolated drive system. that's all the information i can give, and hopefully it's right. the tires which i know fit are the dunlop elite 3 in sizes mu-90-16 rear, mt-90-16 front. they are sure an amazing difference in all ways compared to stock.

Assuming you have a much wider gap the other side I would check your vehicle alignment. My rear tyre is very close to my fender, but plumb centre.
