255s are the cam of choice for many bagger owners, they work exceptionally well in the heavy bikes, and the short duration helps keep fuel mileage up. Not a big hp cam, though.
There are so many cams to choose from that picking one can be somewhat daunting, but in reality, almost any cam will be an improvement over stock, and as long as you stay with the more conservative grinds, you almost can't go wrong. Woods 5, 555, 6, Andrews 48, 37, SE255, 254. 204, CycleRama 575 to name a few. Every one of these cams have been used in similar builds to yours, and have had good outcomes.
Don't fall into the trap of getting all wrapped up in other people's dyno charts, trying to chase the most hp, or worrying about exactly where the torque curve starts. Look for a conservative grind that other folks speak highly of, and you'll be good to go.
