Well, changing oil in all three holes is really about as simple as it gets. For me, pulling wheels off or digging into the engine is not something I feel comfortable with. I mean, if you screw up on putting wheels and engines back together you can have a major issue. OP is correct in pointing out that there are a few things we can do to save a buck and not be a genus mechanic to do it. If you can afford outside service, it's your choice. If not, get the manual and do as much as you feel you can do correctly. Again, if you screw up and are going down the road at 70 mph and one of your wheels come off because you did a bad job, the cost savings of doing it yourself won't mean much. It is a personal choice and one should not be criticized on either side of fence when it comes to doing it yourself or having a outside source take care of it.

I can afford to have my service work done but I choose not to. One reason is I don't trust most technicians. Another is I enjoy doing that kind of work as a relief from my real job. It never hurts to know your bike well. I do a lot of riding in fairly remote places and other than the Phoenix and Tucson metro areas, most of AZ is sparsely populated and remote. That knowledge could get me out of a jam one day.

Sparsley populated, unless you count all those aliens that I keep seeing people find on all the tv shows. But I guess assistance from aliens is probably not a common... : )
