I find it interesting that your oil temp only got to 180 degrees after idling in a hot garage at 90 degrees ambient temp. If I did that to mine it would be so hot after 20 minutes that the fins would be smoking.
Well have to say, the temp gauge on the bike has always shown it to run on the cool side, even after the engine was built. The temp unit could be off, as it has been this way ever since the oil temp gauge was installed approx 20K ago.
on hottest days, it rarely goes over 230 and even on this most recent ride in Austin traffic on friday at 3pm when it was 95 degrees it never exceed 230.
Just reporting the conditions as i see them, i did not use another method to measure the oil temp, only the gauge. I too like you thought it should have gotten warmer, but i am trying to solve one problem at a time. I will work on the temp gauge after i truly solve this over full issue.

took off Jagg adapter on oil filter housing.
re-installed same oil filter.
started engine, rock solid oil pressure at 35 PSI,.......
right on target, mid point of stick between full cold and full warm.
Appears the problem lies in the jagg 10 row oil cooler......
comments? or is this just a brief reprieve before further trouble?
I would put the oil cooler back on with a new filter (or drain the one you have ) and see if you can duplicate the original problem. This will either confirm that the problem is the oil cooler or something lurking deeper.
