From the looks of it I will have to scrape it off of everything. If the clutch plates are off, will using a degreaser inside the chaincase cause harm to anything?
how bad is it? i know everytime i've done a primary oil change, or even just had the derby cover off, there is a thin film of the gray stuff on the derby cover. it will wipe off with a paper towel, but i don't mess with it because it will just come right back.
If your clutch really is slipping, part of that goo is clutch friction material. The goo isn't causing the slipping, it is the result of the slipping. Before riding it again, do another , proper, by the book clutch adjustment. Hopefully, it isn't too late to stop further clutch damage. Worst case, new clutch time. If you are running in the primary an oil marked "Saves gas" or something similar, that has contributed to your trouble. "Gas saving" oil has friction modifiers which reduce clutch friction and make them more prone to slip. How much free play do you have between the lever and the lever mount? Should be 1/16 to 1/8th of an inch and that is AFTER the clutch release plunger has been properly adjusted. Actually, the free play is measured where the cable ferule enters the clutch lever mount. Pull in the clutch lever, then as you release it, try to pull the clutch cable sheathe out of the hole it goes into. With the lever fully out, you should have that 1/16 to 1/8 gap between the ferule shoulder and the mount body.
You can learn a lot in here but lesson #1 should be to get a service manual.

I use Amsoil 20-50 in the Chaincase and the other 2 holes as well. It is too hard to find the specific Amsoil Chaincase oil where I am.

Amsoil doesn't make a primary fluid. Try some Redline Primary Fluid works way better than the V-Twin 20/50.
