Bottom line is you'll want to replace everything.
new head pipes will get rid of the cat and let it really breath, the slip ons give it that signature sound you are after

From personal experience I wouldn't bother with slip-ons if you're not getting rid of the cat in the header. To me, baggers just don't look right without duals, but that's just me. As far as brands go, start searching...
Just bought a 2013 Street Glide and not sure what pipes to get, slip on, full exhaust, 2 into 1 or dual.
Give the MGS true duals a look. There are a couple of threads in this forum on them (including a sticky) and a couple of vids. They're running a Stage 1 deal this month that includes the pipes, a PowerCommander V, and an Arlen Ness Big Sucker A/C - all for $1089. Just ordered that for my 13 SG. Was considering Rineharts before I found MGS - and the list for the Rineharts alone is $990.
And +1 on the aesthetics of true duals on baggers, BTW.
Go with the full system, do it right from the start once!

I see this is your first post so I will try to be nice about this: DO A SEARCH! Then do another search, then maybe another search. Not sure anything is talked about more than this. You'll get waaaaaay more than enough info to satisfy your questions as well as the questions you didn't know you have.
I'll give ya an answering anyway though:
De-cat or buy a new head pipe b/c you have to get rid of the cat.
Do a stage 1 AC. Any will do but I say the SE
Get a tuner. I pick PCV and the guys at Fuel Moto are great. You could do the DL/flash from the dealer though.
2-1 looks stupid on a touring rig IMHO
Duels will give you the best sound, and might be cooler, but they rob you of power and economy.
I am VERY happy with the looks and sound of my Rinehart 4" slip-ons. I still have the stock head pipes w/ the cat in place. Runs great, sounds great I couldn't ask for anything more.
Though, this is my opinion. Many have others... :-)
I'm not so much about performance as I am visual and audible aesthetics. I like that these don't cross under the frame, and they sound as good as the V&H Classics/true duals I had on my '07 SG.
