I think that compression is pretty low and IMO 10.5 would be a better number to get more performance.

From my research you can get more performance from a 103 stage 4 or FM 107 for less money. If it were me I'd do the FM 107 they can set it up based on how you ride and what your end goals are.

That doesn't inspire confidence with me. If he's so experienced (and he may well be) why does he need to consult with anyone? If you went to a Doctor for a standard procedure would you let him do surgery if he had to check with other Doctors on the correct approach? I think not. I'd go to the Doctor he's asking.

A good engine builder will/should ask what you want, what your budget is and make suggestions based on other builds they've done and had success with.

That basic build info should roll off his tongue. I think you have too many Chef's in the kitchen on this one and they're not in the same shop. Head guy, dyno guy and assembly guy will all point fingers at each other when it doesn't work out as planned.

My 2 cents..........

And I can appreciate it.......

There's always those guys that know everything, their way is the only way, that are so smart they consult with know one...

By the way, I'm in health care... Doctors always consult with specialists and get second opinions. There is something called the health care team ...

There are also people thar sit around and look for negative things to say about other people.

The good news I feel sorry for them but thats about it because I certainly don't care what they think.

He's starting with a 110" engine.

I hope your bike runs great afterwards and I don't mean to bust your chops but I hate to see you end up with something that constantly needs attention.
I have a friend that did the exact mods as you (except cams) to a '12 CVO SG and he is constantly fighting a hiccup or miss.

Correct pistons (many aftermarket pistons available for any compression you desire) and head work would be a preferred method for my bike.

Going with S&S 570 cams, Heads ported and polished, Decked and .030 gaskets. and a good tune.

Any guesses on final numbers ????
No serious guess on final numbers, but I took a look at the 570 cam specs. versus the cams I've used. I usually don't like to push the lift numbers for a road bike much over .520, but .570 isn't bad. Duration & overlap are reasonable, so I don't see any real problem. Mike's right about angle changes when decking the heads, but it's a pretty small change. You might experience some intake leaks, but usually you can cure them by puttin' a little gasket sealer on the new intake gaskets. Since your builder is tryin' to keep compression below 10:1 you should have a real rideable bike. I have a 10.5:1 that is rideable....if you want to go fast. Not so much in school zone traffic.....<shrug> It's your bike, build it your way. & let us know how it comes out.

Fuelmoto has some dyno sheets with CVO 110 using Woods cams.
