Cat removed!!

The answer to this question is probably out there somewhere in this forum already.
Maybe someone can direct me or tell me.
I want to gut the cat but don't quite understand how to handle the O2 sensors.
Do I unplug them by the fuse box and remove the sensors from the pipe once the pipe is off the bike or do I take them out while the pipe is still on the bike ?
When they go back in do I have to put something on them or just turn them back in ?
