Bought a '14 SG. The bike is great. Want it a louder when I yank on the throttle but mellow enough cruzin' along. Can this happen?? If I change out the exhaust, will it void the warranty??
YouTube is a great tool for sampling different exhaust sounds. Remember an exhaust on a bike started in a garage, or outside backed up to an automobile or a wall is going to give a deceiving sound. Best examples are in open driveways. Many will have examples of pulling out onto a highway and going thru the gears as well as driving by at speed.

Actually, the 'potato' idle WAS a result of the dual fire ignition system, and not the exhaust. The waste spark was what created the off kilter idle, and that went away when the MoCo went to single fire ignition, wherein each spark plug fires independent of the other.
Case in point...take a shovelhead with a stock ignition, and you'll hear the 'potato' idle...install a single fire ignition, and that goes away. How do I know that? Cuz I did it!
My 2006 Street Glide doesn't have the classic potato idle. You can get closer to it with certain cams, but that's another story...
Listen to the SE Street Cannon mufflers. They have a great sound. This is what I put on my bike & I really like them. Does not void warranty. Don't even have to change air filter system or add download.
Sounds like you are wanting the sound from a good set of slip on mufflers. A friend put on a set of VH Twin Slash mufflers with the stock head pipe and the bike was louder and had a deeper rumble than stock but not as loud as my Rineharts with VH Power Dual head pipe which is catless.
Go ahead and "Pull the Trigger" on a set of pipes that give "A deep rumble but really bark when you open it up".
