JIMS 120, 131, 135, S&S Cycle 124, or Ultima who make big CI engines all the way up to a 140. S&S would be my choice. Unfortunately you are not going to touch any of these for your $7500 budget. You will not get fast, reliable AND cheap.
My preferred starting point would be S&S. They do two versions of their 124", one with 'touring' 585 cams and lower CR than the higher tuned version. However to wake one of those up a little more, consider talking to Star Racing, or HDF sponsor Hillside Cycle who can give you around 145/145, if that will do! If you include selling on your 120R I'm sure there is a very serious solution waiting for you out there.....

I'd keep the '06 for sure. Spend that $4K-$5K on performance upgrades and you'll have an '06 that'll handle as well or likely better than that 2012.
