if oil pressure dropped ( due to viscosity breakdown)
if the motor started pinging
IF you feel that you have overheated the motor- change your oil as soon as you can.
Oil will breakdown if overheated ( dyno breaks down long before syn)- so change it.

I have the Power Vision. It tells me the engine temp. It normally runs 250-260 degrees. In bad traffic it jumps up to 340-360. Just want to know how hot is too hot.

Sounds about "normal". You likely wont achieve "too hot", just depends what your metrics are, but cooler is always better.

I think the PV displays cylinder head temp, which is different and likely higher than oil temp, I wouldnt equate cylinder head temp with oil temp.
I don't know which version he is running, but my PV2 reads BOTH head temp and engine temp., but not oil temp.
HeadT is not a "real" measured value, there is no rear head temperature sensor. Head T is as an algorithm based on ET and several other parameters, used by the ECM to manipulate spark timing tables, its useless to the user as means to monitor temperature.
