U can pin to zoom in n out to take a complete screen shot of the AFR or any other table..this feature was added after yours truly suggested it to V&H, so plz do make good use of it
I'm on the Android platform on my Galaxy Note 5..but this is common feature irrespective of the OS platform, it's jus like you zoom in n out of pictures in ur gallery. If vertical pinch isn't working try horizontal pinch with ur thumbs...here I'll post a screenshot of how it looks.

I would not bother building a map, unless you think you can do better than what V&H puts in a can.
Their canned maps are tried and trued to work best. And include many features your bike probably has yet to own or was modded with. Best leave it to them.
And your fp3 or any other tuner on the market will **** block the factory ecu

Auto tune will not change the fueling table you posted. It changes the Volumetric Efficiency (VE) tables. The VE tables help the engine achieve the commanded fueling by correcting the air flow calculations, especially when running open loop.
Installed, flashed and test ride today. Just a stock bike, but I noticed a positive difference.
Less lean
more power will come from a less restricted muffler and intake filter
a two into one exhaust will yield best increase and the bigger your filter element, the more air will enter the intake to maximize efficiency of air and fuel automation
