I'd call Long Ride Shields. Thier 16" recurve (actually 15.5") has transformed my Road King. Same shield fits Switchbacks. They may do custom heights. Great product and a good company. You could cut the stocker down, but the recurve makes a big difference. Much quieter and smoother air pocket while being much smaller profile.
If you did want to cut down a stock one, go to a glass company. One that does mirrors and china hutches etc. I got mine done for $70. Turned out great.
