i think you would be good with 14s but I would still suggest 16s. I agree with you in regards to higher bars allowing you to keep your back straighter as that is the reason I find mine to be far more comfortable. Since I already forgot which Dyna you have, I would suggest getting 2 inch risers if you don't already have them (my lrs came with 5.5 risers so I bought drag specialties 1.5 inch risers) if you're gonna go with apes.
Again, if you go with 16s, and they feel a little higher than you want, you can always loosen the riser bolts and pull them back a little to make the grips a little lower. I started off with mine pulled back a few inches and ended up pushing them forward for a higher feel and I think they're perfect.
When I first bought my bars I was in the same boat and didn't know if I should go with 14 or 16. I didn't want to go with 14s and have them be too short cause I don't like the look of higher risers with ape hangers.

mid you already have the size you want, you could always have them powdercoated. I bought mine brand new, then scratched em like a ****in idiot so I had to have em powdercoated. Only cost me 40 bucks it just sucked cause I was trying to tear the packaging open instead of just cutting it like someone with a brain so when it finally tore open they came flying out. That's like a kick in the ***** from Jesus
Imo 12 inches are the perfect compromise for style and comfort. 14s look very nice. That's why I got them. Still comfy...but that's where I'm feeling a larger compromise in comfort. For longer rides I'd rather have 12.
16s...that's pure style unless your built like a giant.
I'm 5-10 with 14s. My arms are parallel to the road.
