I've got the V&H slip-ons with quiet baffles andno other mods and they are great.
Ran the bike for a while without the baffles and it was very loud but bike didn't seem to run that great to me. Definatelyruns a lot lot better with the quiet baffles fitted, and although a bit quiter, the quiet baffles give it a much nicer deeper rumble sound.
My personal opinion is this: I HATE SEII pipes. They actually took the right sound out of the Harley due to the pressure of the EPA to quiet them down. SEI's were SO much better. Now if you change the baffles then they might be ok. I myself run V&H BS Staggered on my '07 Dyna and LOVE em. I have the the stock "baffles" which is to say no baffles...lol. I have the quiet baffles coming to achieve that low rumble that a buddy of mine has. Also the Rheinhart's have a great sound. A bit pricey, but hey, there's more to life than money, eh? I did, however go with a HD SE Stage I airbox and the V&H Fuel Pak. Not cause I was looking for speed, but because newer Harley's come from the factory tuned so lean to meet with emissions standards that any flow change you make without the proer tuning could result in valve burn. Not necessarily guaranteed to happen, but if there is a chance I'll have downtime with no scoot then I go the extra mile. The additions that I made did add about 10hp, with marked low end torque improvement and improved throttle response, but by no means makes it a crotch rocket. i like you am in it for the sound and not the speed, but my reccomendation is do whatcha gotta do to do the job right.
