I loved my '78 and '80 Harleys.... They are older technology and would need some work to keep them running today...
Please forgive me, I do not mean this to be condescending, but based on your question I highlighted above, it will be easy for you to get in over your head trying to fix it yourself...
I suggest you hunt down a proper factory service manual for the year/model you have, and enlist the assistance from a friend who has experience workng on motorcycles, and maybe even experience working on older Harleys... shovel heads specifically..

I hate to be "that guy", but did you read that before you posted it? I gave up about 1/2 through. You don't have to have perfect spelling, grammar, or punctuation but man, you post stuff like that, and no one is going to take the time to try and understand what you're asking.

I have to agree with Hattitude here. You go tearing into a project like this with no real idea what you're doing, you could find yourself in over your head really quick. And if the bikes are in decent shape it would be a shame to half *** it and end up with a POS.
No offense, but if you have to ask a question about why fluid is coming out of a master cylinder, then you're probably not ready to restore a classic Harley. Do yourself a favor and listen to the advice about getting a factory service manual. And start watching tons of Youtube videos, specifically for the bikes that you have if possible. You'll be shocked at how much content is on Youtube and how much you can learn from simply watching other people do it.
Dont get discouraged, learn all you can, and stick around here. This is a great hobby if you have the time to devote to it.
