I have a black 2007 Street Bob and I wanted to see if anyone has put the polished stainless bolts on their engine. I am curious how they lookagainst the black engine. I have found the polished bolt with the knurl left on and show polished bolts with the knurl ground off. If anyone has either, please let me know how you like them.

I just got done installing chrome ones, but there are some guys on one of my threads that did the ones you are talking about. Check out a thread in the Softail section, titled "Night Train ****".
The polished stainless bolts are the only way to go. Chrome ones will rust inside the hex, etc. I have used the Diamond Engineering smooth polished bolts and they have held up for years with NO maintence.
I've replaced or capped most every nut and bolt on my bike, mostly with chrome smooth sided allen head bolts. The look would be about the same as polished stainless. The above poster is correct about the rust. About half the upward facing bolts rusted on the inside of the bolt head. I'm told that a dab of clear fingernail polish will fix that problem. I just used the small polished caps that plug into the openings to cover the openings. Looks pretty good. I just replaced the bolts one at a time and have had no problem with leakage except on the outer primary after about ten thousand miles and it stopped after I snugged up the lower bolts.
This pic will give you some idea of what it will look like.
