You do have a hard choice. I love my 07 FXDC, but I have been looking hard at that FatBob. I test drove one in Daytona and loved everthing about it. There is a thread here in the Dyna sect called something like "FatBobs, the new Boss" that has a great article on the FatBob. Good luck on your choice, either one will be a sweet ride.
Started out in the Harley world on a Super Glide, went to a Bagger and I am back on a Dyna........'08 Fat Bob! The main reason I bought the Fat Bob was the big tire on the front and I really like the wide tire on the rear!! IMHO it is way more stable and handles better...........especially on those darn grooved surfacehighways. What ever you choose......you can't go wrong with a Dyna model.
I'm 30yrs old, former MX racer and sport bike rider/racer. My Fat Bob is the first H-D I owned and I love it. The transition was great and the bike handles like a champ. Tons of short rides but 2 hours is the limit of my sattle time so far, but I had no issues with it. Get the foreward controls, much better ride. If you like the chrome, dont choose the Fat Bob. It's all about style. Duel headlight, fat front tire, old school cool!
I would say the fat bob handles real well and I am very happy with mine. I am coming off sport bikes and rode dirt bikes for years and I love the way this bike rides. It feels right but any dyna would be a great choice.
How big are ya? That would make a difference. I love my Custom. I've had both front ends on bikes and I really think people over-rate the big front ends.Unless it's ***** you're talkin.

Check out the Lowrider, I came mostly from the dirt world and the Lowriders bars are more in line with what I was comfortable with. No regrets. I opted for the optional spokes since I didn't care for the cast wheels. Good Luck!
My '08 FXDC is GREAT! I love it! I do the short runs, but like the 200-300 miles rides too. She handles nice, and is comfortable too! I like both of the bikes you're looking at. I like chrome on a bike, so I went with the FXDC. I did put some ST Bob mini apes on her though. The stock bars on the FXDC weren't too comfortable for the longer trips. Also, going to forward controls.
Anyway, before I start rambling on too much, ride the Bob too, before you buy! Get the experience of both bikes, and remember, you can change out ALMOST anything you want down the road...
