Okee dokee. My valves look white and powdery which makes me think time to put some new ones in. 1. I have never done anything like this before (I have the service manual but tips would be greatly appreciated.) 2. Do I need to change my valves? 3. What would cause the white build up? Also see the sheared bolt? Any good methods to removing these?
I would go ahead and remove the heads and at a minimum get the valves cleaned up and reground, new would probably not be a bad idea just from the age of the bike. Get the heads cleaned up while you're at it. Head being off would make getting at the broken stud a little easier.
Looks like you had a pretty severe exhaust leak for quite a while on the head in that picture.

To me it looks as if it was running lean or with an exhaust leak. If I were going through this and money was not a concern I would upgrade the heads, if money is tight, replace the valves and have the valve seats reground. Regaurdless to which you decide to do, the first thing to do is to determine the root cause of your problem or it will just come back to get you again.
