The engines are designed to run lean and will run very lean for a very long time without issue. Regardless, the ECU will pull cruise operation into the stock AFR or will throw a code. The reliability issue is WOT for an extended period of time, but folks don't typically run WOT on the street all the time. So overall it is certainly safe to run stock maps from a reliability point of view. If you are getting pinging, however, something else is going on that needs to be corrected as you can ruin valves and burn pistons in short order.
The drivability issue is more about throttle transitions (O2 sensors not in play) where the AFR may be just a little too lean for smooth operation, and then there is the discomfort of engine heat for some. Some also don't like the decel pop and exhaust garble, but that doesn't hurt anything.
