I have an 07 street bob as well with 27000 miles. My Highway MPH is 47 & city is 39. I weigh in at 160 lbs. Only mods are big radius pipes & force wind intake.

I have a 07' that had SE 103 kit installed before I trailered it home. I did break-in as was recommended. I only worry about running out of gas not how many mpg? @ 5,000 I added a Thunder max auto tune, thunder header, @ 10,000 did a Barnett clutch set as stock was toasted and changed from belt to chain drive after breaking two belts doing stupid things. Trans had to be rebuilt also-OUCH! My mechanic who builds champ drag bikes says my engine is really strong and wonders how it lasted as long as it does. Just recently I seen the new Pulstar pulse plugs that replace spark plugs. I bought a set for $40. I have tried about every spark plug and there was no diff to note. After using the Pulstars I notice the engine purrs and there is a hella increase in HP low and top end and about 10-15% in gas mileage. So I am recommending the new Pulstar pulse plugs which do give your motor more PIZ-AZZ and better gas mileage. Try it you will like it!
