I bought a '14 Fat Bob in October. A few things you didn't mention that are worth considering based on my experience over the past few months:
- Bar reach was too far for me with the stock drag bar/risers. After playing around with a few options, I ended up swapping the riser out for LA Choppers pullback risers and 1" spacers from http://www.spacerjim.com/HarleySpacers.html. Obviously don't plan any ergo mods until you've had a chance to put some miles on the bike but these are options if you want to keep the drag bar but want a bit of additional height and pullback.
- Tank gauge from Dakota Digital. Can be had for far less than full retail on eBay & Amazon. Not sure about international options, though. I was unsure if I'd like the full digital display but wanted the tach/gear/status display and the MoCo part didn't do it for me. Really happy with this.
- Mini footboards. I have a 30" inseam and debated (even tried) a reduced reach seat. Ended up with these and like them a lot.

New tach is on my longlist. Thinking about some tall risers and MX-bars, but as you said, I need to put some miles on it first...
This is something you will not regret. I wish I had done it from the beginning. I ended up buying 11" risers from Forbidden Motorcycles and ODI MX bars. The handling improved instantly from the 16" apes to MX bars. The Traxxion springs and 13" Ohlins shocks has made the bike so fun, I can't believe I waited a year to do it.
Next up will be a stabilizer from Sputhe or True-Track.
