Ethical question
As for the OP question; I too don't see the reason to find out what oil was used as a question that you should bother the previous owner with. Regardless of what oil was used is that going to change what you do?
Now, if you're at a local "bike night" and the previous owner walks up to you and starts a conversation then ask away anything you want.
That's what happened to me and I got a lot of interesting information as well as the guy gave me his number and told me to contact him if I had any other questions.
I never contacted the guy and have not seen him since.
As for whether or not it's ethical to contact previous owners; I don't think ethics has anything to do with it.

So the previous owner decides to be a nice guy and answers what oil,, then a little light conversation and it's done,, right?
Nope, next week it's;
"Hi it's me again,, I noticed a funny sound from the fuel pump when I turn on the key,, Did you ever notice that?,,
Then a week after that;
"Hay bud, me again,, I just saw a scratch on the rear exhaust, was that always there? And did you have as hard a time as I do getting all the polish out of that little notch in front of the tank,, I know,, maybe we should grab a beer and kick it for awhile,,,,

What if he tells you he ran 0w20 dino in it at 10,000 mile intervals?
then again, he may have all the take off parts for you for free (like me) including things like color matched lowers.
