OP was asking about a future collectable, and most posts have been on investment.

Definition of collectable: A collectable (collectible or collector's item) is any object regarded as being of value or interest to a collector (not necessarily monetarily valuable or antique).

Night trains i see selling for as much as they cost new. However, i think collectible wise hard to find would be a 2006 FX springer. Its the last year of carb i believe, so you get that true carb harley sound but its a later model springer.
